With the holidays here, I find my usual balanced diet tilting more toward the sweet side of foods and away from balance. Even some of my favorite holiday savory foods, like split-pea soup, lean on the acidic end of the scale. To combat this acidity, I have been drinking a pint of water each day with a tablespoon of vinegar and juice from half a lemon. This mild tonic has alkalizing powers and can help bring balance to an acidic body. (There is a whole debate out there about acidity and alkalinity in the blood, but my own measure comes mainly from my throat... if I feel acid in my throat, I know I'm out of balance.)
This morning I decided to go for a green juice--something to rev up my Sunday and upload massive amounts of nutrients into my body. The recipe makes enough for two.
Green Juice Morning
Ingredients:
- 1 pound of kale
- 7 stalks of celery
- 6 small apples
- 2 large 1-inch hunks of fresh ginger
- juice from 1.5 lemons
Instructions:
1) Juice in a high-powered juicer. If not available, it is possible to blend all these ingredients in a high-powered blender and squeeze the juice through a cheese cloth or nut mylk bag.
